fast moussaka with salmon

When we go out for dinner at a greek restaurant I always take moussaka.
I just love that. So I want to try to make one of my own and use salmon with it instead of meatloaf.
I hope you like this recipe.






What you'll need:

600 g of potatoes
2 eggplants
olive oil for frying
0.5 bunch dill
40g butter
50 g flour
400 ml of water
1 vegetable stock cube
200 ml mascarpone
100g grated cheese
200 g of salmon

Bring a pan of water and a little salt to the boil.
Peel and cut the potatoes into thin slices. Boil the potatoes in about 6 minutes

Preheat the oven on 200 degrees.
Cut the eggplant into slices.
Heat a little oil in a frying pan and fry the aubergines over and over in about 6 minutes.
Chop the dill.
Melt for the roux the butter in a saucepan. Stir in the flour and cook about 1 minute.
Add the water with it while you stirr.
Add the vegetable stock cube. Bring to the boil and cook the roux for about 5 minutes until a thick sauce. Remove the pan from the heat and stir in the mascarpone, dill and the half of the grated cheese into the sauce.
Spread half the potatoes, half the eggplant, and half of the salmon on a greased baking dish.
Pour half of the sauce and repeat the operations in the same order. Finish with the remaining grated cheese.
Bake the moussaka with salmon in the oven for about 15 minutes until golden brown.
